Roasting with a rack
Step 1 for best results spatchcock your chicken (cut out the backbone and lay flat on the tray) next rub down the whole bird with softened butter then season generously with both Made in America and On Everything rubs, be sure to season underneath the chicken skin! Wrap chicken up for best results let it rest overnight or at least for a few hours.
Step 2 (preheat oven 300degrees)
Place chicken on rack skin and chop onion then put on rack with your chicken. Place chicken in the oven for 3 hours or until internal temp of breast reaches 165 degrees. in a sauce pan meltdown butter add garlic and some of each seasoning use this butter sauce to baste chicken every hour.
Step 3 let chicken rest for 15 minutes then carve and serve.
